Who is Iván Cruz?

With over 30 years of experience in hospitality services, Iván Cruz is a teacher in the art of carving. Since 2003 he has trained new generations, combining his role as a Hospitality Teacher for the Canary Islands Department of Education with his freelance work, but his true hallmark lies in the precision and ritual of the knife.

His unique proposition is hybrid carving: he masters both ham and salmon, breaking the mold of the traditional carver. I recommend booking at least four months in advance for weddings and three months ahead for private or corporate events in order to secure the availability and ensure a memorable carving experience.

Do you offer salmon carving in addition to ham?

Of course, salmon carving is a differentiating and complementary value of my service. I combine a ham carving show with live salmon carving, offering your guests a dual gastronomic experience that surprises and elevates any celebration.

Do you travel outside Lanzarote for events?

I mainly work in Lanzarote and Gran Canaria, although I consider any type of travel through a tailored quote.
